meatball sandwiches

slow cooker

These savory meatball sandwiches and their tasty sauce will satisfy the hungriest crew. The farmer's wives love to serve this hearty meal to their hard workers on a crisp fall day.


2 lbs. EBF lean ground beef  

1/4 cup parmesan, grated

1/4 cup dry breadcrumbs

3 tablespoons parsley, chopped

1 egg

2 teaspoons garlic, minced

2 tablespoons olive oil

1 teaspoon salt

1/4 teaspoon pepper

2 14 oz. cans tomato sauce

1 14 oz. can diced tomatoes

1 teaspoon dried basil

1/4 teaspoon crushed red pepper


Mix Lean Gound Beef, parmesan, breadcrumbs, parsley, egg, garlic, olive oil, salt, and pepper. Knead together with hands. Form into 2 dozen meatballs.  Pan fry or cook in the oven.


In slow cooker, mix tomato sauce, tomatoes, basil, red pepper, and ½ tsp salt.  Add meatballs.  Cover and cook on low for 6 hours.


Serve on hoagie rolls with sauteed onions, peppers, and additional parmesan, if desired. Enjoy!
