Stuffed green peppers



Brown up our ground beef for this quick weeknight meal. They’ll love the bits of beef stuffed in a pepper that’s baked to perfection.


1 lb. package EBF Lean Ground beef or sausage 

4 green bell pepper

1/2 cup sweet onion, chopped

1 14 oz. can diced tomatoes

1/2 cup long grain rice

1 1/2 tablespoon Worcestershire sauce

1 teaspoon dried oregano

1/2 cup shredded cheese


Bring pot of water to boil.  Place in green peppers for 3 minutes that have tops removed and have been scooped out. Remove to a cold water bath.


In a large saucepan, brown meat with onion, salt, and pepper to taste.  Then add tomatoes, rice, Worcestershire, and herbs.  Bring to boil.  Reduce heat. Cover and simmer for 15 to 18 minutes or until rice is tender. 


Stir in ¼ cup cheese.  Fill peppers with meat mixture.  Place in baking dish.  Bake at 375 degrees for 15 minutes. 


Sprinkle with remaining cheese and let stand for a couple minutes before serving.  Enjoy!
